Shanghai cuisine
The youngest of the ten major cuisines in China is Shanghai, with a history dating back ‘just’ over 400 years ago originating during the Ming and Qing dynasties (1368-1840). Shanghai cuisine is characterized by the use of alcohol, often in combination with meat, fish and shellfish. Many meals are bright red in color because of the use of wine, soy sauce and (predominantly red) vegetables. The preservation of original flavors of fresh products and spices is key. Shanghai dishes are therefore light, rich in flavor and usually finished with beautiful decorations.

Cantonese cuisine
Cantonese cuisine comes from China's southern Guangdong province. The recipes of Cantonese dishes appeared in the literature of the Han Dynasty (206 BC) and became famous worldwide at the beginning of the 20th century. Minimizing the use of herbs preserves the natural flavor of the vegetables and meat. For the same reason, the main way of preparing these dishes is by steaming and stir-frying. And because the dishes are lightly seasoned, they are also very fresh and soft.

Sichuan cuisine
Of the eight different styles of Chinese culinary art Sichuan is perhaps the most popular. Its origins can be traced back to the Qin and Han Dynasty (221BC - 220AD) which spanned across the Sichuan province in western China. Sichuan cuisine is internationally renowned for being spicy and full of flavor. The wide variety of Sichuan cuisine stems from the basic principle enshrined in the constitution of seven basic flavors: sour, pungent, hot, sweet, bitter, salty and aromatic. In short, if you are fond of hot and spicy food, you’ll be a lover Sichuan cuisine.
